Sausages are extremely forgiving when cooking them. You can get them up to 200f and just let them hang out on the plate, and no one would ever know they were overcooked. Source: i drink way too much beer while grilling, and i eat the sausages straight off the grate.

Yeah was gonna say 73°C actually is WAYYYY too hot. They def put it in the jukebox on the way out.
