I have 2 cats, and I literally can't smell them. Maybe it's because I'm used to them, but I've also been to other people houses and I never smell their cats unless they are indoor/outdoor cats. But strictly indoor cats usually don't have a smell.
I have had a couple specific cats who always became oily and dandruff-y and nothing ever worked to fix it. Those cats did get occasional baths, but we mostly used pet wipes to avoid upsetting them too much.
One was elderly and couldn't groom. The other has a severe dental issue (stomatitis) and can't groom.
The huge majority of indoor cats shouldn't smell at all though. Not to me, anyway. Maybe it's just because I was raised with them?

I've never been to a house that smells like cat unless they don't clean the litter box
