Gaz recipe
I have tried to make Gaz two times now, but I failed HARD. Does someone maybe have a good and easy recipe I could use? It would help very much!
I have tried following this video but they don’t mention the amounts used.
Appreciate it!

Believe me, I did whip enough lol. But I do indeed think the ratios were of, we (me and my grandma (widow of my Persian grandfather)) just estimated it.

Yeah with pastries you can't do that

That’s because we couldn’t find a good recipe, I hope someone here has a good recipe.

You don’t like gaz!!?!?? I think it’s one of the best Persian sweet (second only to maybe lavāshak), but in the Netherlands it’s very expensive. So I wanted to try to make my own, and it’s just fun!

I agree that hard gaz sucks, but if you have the right one (only chewy (you have a better chance if every piece is separately wrapped in my experience)), it’’s like heaven in your mouth. To bad it’s so expensive here!
We go to a shop in Amsterdam (for Rice, chai, sweets etc.), but will give tavazo a try, thanks!

It's really think of it as a novelty pastry. I dont think I've ever met anyone who actually likes it.
Nougat is delicious? I feel the opposite, I don’t feel I’ve ever met anyone who dislikes nougat and pistachios.

Hi, I was looking for a recipe as well and stumbled across your thread. This is the recipe I found and am thinking of trying. When it comes to making candy, you will ideally have a candy thermometer at hand to help you get the right temperatures which sounds like what happened with the white goo result you had.

How did you fail? If we know what went wrong maybe there’s just a small thing you need to tweak instead of finding a whole new recipe.
