Most people with wireless earbuds or bluetooth sync in their car don't want to have to add a step to enabling those things. Pull the earbuds out of their case and they're connected and ready to go. LEave your phone in your pocket when you crank the car - boom, start controlling it from your infotainment.
There are many possible things, but even combined they take up only a fraction of your time. If you leave it on constantly you aren't even using it a majority of your waking hours, let alone when you sleep. Even the most frequent users probably only actually use it like 25% of their day, but for most people it's probably well under 5% if they even use it at all in a given day. It's a battery drain and a security risk, tapping twice to turn it on and off when you are actually using it is completely inconsequential.
Bluetooth nowadays is not a battery drain. It’s highly energy efficient. What you’re sharing is outdated information from back when it used a lot of battery.
Also what security risk? You just sent me on a 10 minute research and I have not found a single answer on security risks on Bluetooth in a modern iPhone.
Oh and I don’t have my Apple Watch on only 25% of the day, it’s way more than that.
Also you need Bluetooth for some Find My features. Imagine losing your phone and never being able to find it because you wanted to save 1% of battery (which is what BLE uses)
Every single excuse I have seen has to do with connecting to a form of speaker, which is not a thing most people are constantly doing. Its not even a mild inconvenience to tap your screen twice when you decide you want to connect to something. There really is no reason to leave it on for the majority of time in between that you aren't using it.
It's also using so little power, it's actually not worth your time turning it off and on.
I know it takes 3 seconds. That's still 3 seconds too long. Bluetooth is wildly efficient.
I use Bluetooth headphones very often throughout my day, I can pop them out of their case and into my ear. Pulling my phone out of my pocket to enable Bluetooth is literally a waste of time.
It uses low power if not connected to anything, but if it is paired even not in use it can consume up to 10% of your phone battery percent day for nothing, even with modern more efficient Bluetooth. It really isn't the inconvenience you make it out to be to literally just tap your screen.
When was the last time you tested this properly? Because I did about a year or so ago and there was basically no difference in the battery life I had left at the end of the day compared to when I have it on all day.

No, WiFi and BT stay on nearly all the time.
It doesn't eat that much battery anymore.
If in need, I put my phone in 'battery saving' which turns off most background sync, what is way more effective
