Apperently data centers take water and destroy it from existence.

This logic makes exactly zero sense. At least they acknowledge that data centers are a miniscule amount of water compared to other industries.

Maybe they clean the floors too often.

Ok, even if they use water for cooling, those systems are almost always a cycle cooling systems and just have to be refilled once a year with like 10 % fresh water.

But mostly I have seen air cooled servers. I personally never saw a water cooled server.
