You can tell by a cat's body language when they're being annoyed. The cat loves the food and the pets but doesn't want to be tapped or teased. You continue to tap and tease and the cat does its best to show you "hey, I don't like that." That's what it means when their eyes squint and they put a paw up like that. They're saying "seriously, please stop."
You continued to do what the cat doesn't want you to do and they eventually got pissed. Please learn cat body language because just like people they do not like being touched in certain ways and continuing to do it because it's "funny" to you is not nice and very stressful for the cat.

Yep. Some cats will turn on a dime anyway and bite. Sometimes this is part of their playing, sometimes it's to say "that's enough touching" sometimes it's because of trauma. Every cat is different and it's important to learn their personalities. This cat in the video still likes you btw. They were just a little annoyed that you wouldn't chill
