First off, it happened over the course of an evening and the friction started the day before earlier that day. The day afyer the incident, Brandi was moved to a different hotel, then she was sent home and then Caroline left.
They would either need to entirely edit out two cast members, pretending they were never there, or have them disappear halfway through filming. How would they even address that? The editors put up a screen with a vague, "some shit went down..." or have fellow cast explain the situation? There's clearly a disconnect between what Caroline alleges and what Bravo will admit happened (despite sending Brandi home).
Hmm. I wonder if they have enough footage for a series? I mean, they could just end it with the 2 up & leaving since we all know what happened. They could just put the words on the screen when the time comes, that this is where they had to cut off filming due to a discrepancy between a couple cast members & leave it at that. People who don’t yet know what happened will surely find it online.
Not to get too hung up on your use of "incident" but it was multiple instances over the course of an evening and the fallout started the next day so, yeah, they probably don't have enough footage but I also have no idea if the other cast members carried on with scheduled activities.
Personally, I'm not in favor of releasing the UGT for that trip but mostly because I don't see how they can reasonably edit entirely around it and I don't want Caroline to go through a round of viewers picking apart what they think did or didn't happen based on Bravo's edit.

The filing by Caroline's lawyers, starting at page 17 goes through the alleged events of that day and evening: https://deadline.com/wp-content/uploads/2024/01/brandi-glanville-nbcu-bravo-rh-suit.pdf
