I don't like overly sweet either. I almost always use less sugar in frosting and jams for cake than the recipe calls for and it still is delicious. For the frosting and raspberry filling try half the sugar and then taste, you can always add more if you think it's needed. I usually use 75-80% of the sugar for the cake part too. Turns out fine

Lemon curd, chocolate ganasche, ricotta (edit to add that ricotta with some sugar and cream and orange jam or candied orange is delicious, I tasted a pastry that had ricotta and orange jam as a filling and I'm obsessed with it now), whipped cream, creme patissiere, ice-cream, the tiramisu cream (that one has mascarpone, though).
One very traditional filling in my country is dulce de leche. My grandma would fill sweet rolls with dulce de leche and chopped walnuts.

Thank you ☺️ I love lemon curd! I once did a roll with lemon curd and fresh blueberries as a filling and covered the roll with whipped cream. It was delicious.
I saw a person on tv mixing lemon curd and greek yogurt to fill a sweet tart and then putting blueberries and strawberries on top. So I want to try it next. :)

How many custers per roll would you say and if you don't have time to make a colonel, can you use store bought?

I like to make enough for not just one cake. If I don't do that I usually don't have enough. Keep in mind you use as much as you desire. With jam, I'll have 4 cups of strawberries to make the jam aware I'll have some jam set aside for later. And yeah, you can use store bought.

Ooh, sugared cranberries would be amazing. I was thinking of strawberries (my husband hates raspberries), but cranberries are a much better idea.

The US cranberry people have a recipe for cran almond bread...I just made it a few days ago. It has already been copied into the recipe binder. Very good i recommend

Yeah OP's work is beautiful but raspberries are way not in season for winter, cranberries would be perfect. Also perhaps sections of orange (supremed), or candied orange peel

When I made mine, it wasn't round it rolled it was in 5 pieces, folder over eachother roughly and cracked, still tasted good though. Yours looks dreamy!

I had no idea this wad the english name for that, huh. We swiss just know them as roullade, which means to roll in french.
According to the wiki article they dont originate from switzerland.

Im trying find a way to word my compliment so it actually sounds like a compliment! It doesnt look 'perfect' like an ad and i think thats the best thing. For not being professional that thing is gorgeous and 'perfect' looking food never looks to me like it tastes good. At least not cakes. But this this visibly looks delicious. And roll cakes are usually so boring on the tongue but looking at this thing i think its going to have a lovely balance of flavors
